3 c. cooked rice
2 eggs, beaten (or 1 egg plus 2 egg whites)
2 c. (about 8 oz.) Mozzarella cheese, shredded
Preparation

Combine rice, eggs and 1 cup cheese.
Press firmly into two 9-inch pie pans.
Bake at 450\u00b0 for 20 minutes.
Spread Quick Tomato Sauce evenly
over rice crust.
Top with remaining cheese. Bake 10 minutes.
