Squash Pickles - cooking recipe

Ingredients
    6 c. squash, sliced
    3 c. sugar
    2 c. vinegar
    1 tsp. mustard seed
    2 tsp. celery seed
    2 c. bell pepper
    2 c. pimento pepper (I use diced pimento from the jar, use 1 or 2 jars per batch for color)
    onion (if desired)
Preparation
    Soak squash in salt water 1 hour.
    Drain and rinse well.
    Mix with other ingredients and boil 15 minutes.
    Put in jars and seal. This is great with peas!
