Cranberry-Orange Muffins - cooking recipe

Ingredients
    1 3/4 c. flour
    1/3 c. sugar
    2 tsp. baking powder
    1/2 tsp. salt
    1 egg, slightly beaten
    3/4 c. orange juice
    1/3 c. vegetable oil
    1 c. fresh cranberries
    2 tsp. grated orange peel
Preparation
    In a medium bowl, combine flour, sugar, baking powder and salt.
    Make a well in the center.
    In a small bowl, combine egg, orange juice and oil.
    Add to the flour mixture. Stir until batter is moistened and lumpy.
    Fold in cranberries and orange rind.
    Put in muffin tins, which have been sprayed with Pam. Fill 3/4 full and sprinkle tops with a little sugar.
    Bake at 400\u00b0 for 20 minutes or until golden brown.
