Lefse - cooking recipe

Ingredients
    8 c. mashed potatoes
    1/2 c. whipping cream
    8 heaping Tbsp. butter
    4 c. flour (scant)
Preparation
    Peel potatoes, cook and mash with butter, salt and cream.
    Let cool.
    Mix in flour.
    On lightly floured board, roll out rounds, about 8 to 12-inch diameter, paper thin.
    Bake on ungreased griddle on moderate heat until lightly brown.
    Turn once.
    Takes only about 1 minute per side.
    To eat, spread with butter and sprinkle with cinnamon and sugar.
    Roll up and enjoy.
