Lentil Soup - cooking recipe

Ingredients
    1 Tbsp. butter
    1 celery stalk, diced
    1/2 medium onion, peeled and finely chopped
    1 carrot, pared and diced
    1/2 tsp. basil
    1/4 tsp. celery seed
    1 tsp. chopped fresh parsley
    1 garlic clove, smashed and chopped
    1 c. lentils
    6 c. hot chicken stock
    1/4 c. long grain rice, rinsed and drained
    salt and pepper to taste
Preparation
    Heat butter in saucepan. When hot, add celery and onion; cover and cook 3 minutes over medium heat. Add carrot, spices and garlic; cover and continue cooking for 3 minutes. Add lentils and chicken stock; season well and mix. Bring to a boil. Cook soup, partially covered, 2 hours over low heat. Sixteen minutes before end of cooking, add rice and finish cooking. Serve.
