Ingredients

5 c. potatoes, cooked until tender
1/2 c. skim milk or mocha mix
1 1/2 tsp. onion powder
1 tsp. salt or to taste
2 to 3 Tbsp. vegetable oil
3 to 5 Tbsp. parsley, chopped
Preparation

Mash potatoes until smooth with all remaining ingredients. Should be moist to form into patties.
Place on well oiled baking sheet.
Bake at 400\u00b0 for 20 to 40 minutes, turning once.
Pancakes should form brown crust.
