Beef Stroganoff - cooking recipe

Ingredients
    2 lbs boneless beef chuck (or round steak)
    1 stick butter
    4 green onions, white part only, sliced
    5 Tbsp flour
    1 can condensed beef broth
    1 tsp Dijon style powdered mustard
    6 oz can mushrooms
    1/3 cup sour cream
    1/3 cup Sauterne wine (dry white wine)
    1/2 tsp salt
    1/2 tsp pepper
Preparation
    Remove fat and gristle from beef.
    Cut
    to 1/2 inch thick.
    Cut across the grain into strips about 2 inches long.
    Sprinkle with salt and pepper.
    In large skillet, melt butter and add meat. Brown meat on all sides.
    Push meat to one side and add onions. Cook slowly until clear.
    Push onions to side and stir flour into drippings.
    Add beef broth and bring to a boil, stirring constantly.
    Stir meat, onions and gravy together.
    Lower heat and stir in mustard.
    Cover pan and simmer 1 hour, or until meat is tender.
    5 minutes before serving, drain mushrooms and add to meat. Add sour cream and wine.
    Heat briefly and season to taste.
    Serve over steamed rice.
