Ingredients

1/3 c. uncooked long grain rice
1/4 c. water
2 c. skim milk
2 Tbsp. sugar
1/8 tsp. salt
egg substitute equivalent to 1 egg
1 tsp. vanilla
1/4 c. raisins
cinnamon to taste
Preparation

Combine rice, water, 1 1/2 cups skim milk, sugar and salt in saucepan.
Bring to a boil while stirring constantly.
Reduce heat, cover and simmer about 25 minutes or until rice is tender. Combine remaining skim milk, egg substitute and vanilla; beat slightly.
Add to cooked rice and continue cooking over low heat until thick and creamy (about 10 minutes more).
Fold in raisins. Spoon into dessert dishes and sprinkle with cinnamon.
Makes 4 servings.
