Quail Casserole - cooking recipe

Ingredients
    8 quail
    3 eggplant, sliced
    10 sweet peppers, sliced
    3 onions, sliced
    1 bulb garlic, minced
    1 c. white wine
    1 lb. potatoes, sliced
    parsley, minced
    2 bay leaves
    peppercorns
    salt
Preparation
    In an earthenware or heavy pot, arrange half of the eggplant, potatoes, garlic, pepper and onion.
    Add the quail, and then arrange the second half of the vegetables on top of them, with the bay leaf, parsley, pepper, wine and cover all with tomatoes.
    Add a little water, cover and cook over low to moderate heat until quail is tender.
    Serves 8.
