Tropical Lemon Bars(Yields 12 Bars; Pan Size: 8 X 8-Inch) - cooking recipe

Ingredients
    1/3 c. butter or margarine
    1 1/2 c. shortbread cookie crumbs
    1 tsp. grated lemon rind
    1 (14 oz.) can sweetened condensed milk
    1/2 c. lemon juice
Preparation
    Place butter in glass baking dish.
    Microwave on High for 45 seconds to 1 minute or until butter is melted.
    Stir in cookie crumbs and lemon rind.
    Reserve 1/4 cup mixture.
    Press remaining mixture evenly in glass baking dish.
    Beat sweetened condensed milk and lemon juice in bowl until smooth.
    Spread over crumb mixture.
    Sprinkle with reserved crumbs.
    Microwave on Medium-high for 10 to 12 minutes, turning dish 1/2 turn after 5 minutes.
    Let stand until cool.
    Cut into bars.
