Parmesan Potatoes - cooking recipe
Ingredients

1/2 c. freshly grated Parmesan cheese
1/4 c. olive oil
1 tsp. red pepper flakes
4 large russet potatoes, cut lengthwise into 8ths
1 tsp. basil
Preparation

Place Parmesan cheese, olive oil and red pepper flakes in a large bowl.
Add potatoes and toss until well coated.
Arrange in a single layer on a baking sheet with sides.
Bake at 325\u00b0 for 1 hour, turning the potatoes after 30 minutes (using a spatula will help keep the coating from tearing off).
Remove from oven when golden brown; sprinkle with basil.
Serve hot.
Makes 4 servings. Serve with French Prime Rib.
