Squash Casserole - cooking recipe

Ingredients
    6 c. squash (yellow or zucchini)
    1/4 c. chopped onion
    1 can cream of chicken soup
    1 c. sour cream
    1 c. shredded carrots
    1 (18 oz.) pkg. stuffing mix
    1/2 c. margarine
Preparation
    In
    saucepan,
    cook squash and onion in boiling, salted water for
    5
    minutes.
    Drain.
    Combine
    soup, sour cream and carrots in a separate bowl.
    Stir in drained squash and onion. Combine stuffing
    mix with margarine; spread half of stuffing mix
    in bottom of a 13 x 9-inch baking dish.
    Spoon vegetable mixture
    on top.
    Sprinkle remaining stuffing mixture on top. Bake at 350\u00b0 for 25 to 30 minutes.
    (Leftovers can be frozen.)
