Onion-Cheese Casserole - cooking recipe

Ingredients
    2 c. finely crushed butter crackers, divided
    1/2 c. butter, divided
    3 lb. onions, sliced
    2 Tbsp. flour
    salt and pepper
    2 c. milk
    1/2 lb. cheese, cut into small pieces
    sweet red pepper, cut into rings
    fresh jalapenos to garnish
Preparation
    Preheat oven to 350\u00b0.
    Spread 1 cup cracker crumbs in a greased 8 x 11-inch baking dish.
    In large skillet melt 1/4 cup butter over medium heat.
    Add onions.
    Cook until tender.
    Spoon onions over cracker crumbs.
    In same skillet, melt 1/4 cup butter. Stir in flour, salt and pepper.
    Cook 1 minute.
    Gradually stir in milk.
    Stir constantly.
    Cook until thickened.
    Add cheese and stir until smooth.
    Pour cheese mixture over onions.
    Sprinkle with remaining cracker crumbs.
    Bake 25 to 30 minutes.
    Garnish with red pepper and jalapenos.
