Best-Ever Oatmeal Muffins - cooking recipe

Ingredients
    1 c. quick cook oats (uncooked)
    1 c. buttermilk
    1 egg, beaten
    1/2 c. firmly packed brown sugar
    1/2 c. vegetable oil
    1 c. all-purpose flour
    1 tsp. baking powder
    1/2 tsp. baking soda
    1/2 tsp. salt
    1/2 c. raisins
Preparation
    Combine
    oats and buttermilk in a large
    bowl
    and
    let stand 1
    hour.
    Add egg, sugar and oil;
    mix
    well.
    Combine remaining ingredients except raisins in a medium bowl.
    Add to oats mixture,
    stirring
    just to moisten.
    Stir
    in
    raisins. Spoon into muffin pans, either greased or papered, filling 3/4 full. Bake at 400\u00b0 for 18 minutes. Yields 18 muffins.
