Glazed Chicken Bits - cooking recipe

Ingredients
    2 tsp. each: honey, ketchup and reduced-sodium soy sauce
    1 tsp. freshly squeezed lemon juice
    1/2 tsp. grated, pared ginger root
    1 garlic clove, minced
    5 oz. skinned and boned chicken breast, cut into 1-inch cubes
    1 c. instant rice (hot)
Preparation
    Using a wire whisk, in a small mixing bowl, combine honey, ketchup, soy sauce, lemon juice, ginger root and garlic.
    In an 8-inch microwave glass pie plate, arrange cubes.
    Pour honey mixture over chicken.
    Cover and refrigerate for 30 minutes.
    Cook chicken mixture on High for 2 minutes, stirring halfway through cooking.
    Let stand 1 minute until chicken is cooked through. Serve over rice.
    Serves 2. Contains 202 calories, 1 gm fat and 307 mg sodium.
