Chocolate Zucchini Bread - cooking recipe

Ingredients
    3 c. self-rising flour
    2 c. sugar
    1 tsp. cinnamon
    1/4 c. cocoa
    3 eggs, beaten
    2 c. grated zucchini
    1 c. vegetable oil
    1 c. chopped pecans
    1 tsp. vanilla
    vegetable cooking spray
Preparation
    Preheat oven to 325\u00b0.
    In a medium bowl, mix together the flour, sugar, cinnamon and cocoa.
    In a large bowl, combine eggs, zucchini, oil, pecans and vanilla.
    Pour flour into batter and mix thoroughly
    Spray two
    9 x 5-inch loaf pans with vegetable spray. Divide batter equally between the 2 pans.
    Bake for 1 hour or until firm.
    Cool in pan 10 minutes.
    Remove from pan.
    Allow to cool thoroughly before slicing.
    Yields 2 loaves.
    One-twelth loaf contains 246 calories (47% from fat).
