Red Snapper Citrus - cooking recipe

Ingredients
    1/2 c. onion, finely chopped
    1/2 c. orange juice, strained
    2 tsp. orange rind, finely grated
    1 tsp. salt
    4 (8 to 10 oz.) red snapper fillets
    pinch of ground nutmeg
    pinch of ground black pepper
Preparation
    Preheat oven to 400\u00b0.
    Combine onion, orange juice and orange rind and salt.
    Marinate fillets in mixture for about 30 minutes. Drain and bake, flesh side up, for about 12 minutes or until done. Just before baking, sprinkle each fillet lightly with nutmeg and pepper.
    Serve immediately.
    Yields 4 servings.
