Sausage Ratatouille - cooking recipe

Ingredients
    1 1/4 lb. sweet Italian sausage
    1/4 c. water
    3 Tbsp. olive oil
    2 green peppers, chopped
    1 medium eggplant, cut into bite-sized chunks
    1 medium onion, sliced
    1 (28 oz.) can tomatoes
    2 medium zucchini, cut into bite-sized chunks
    1 tsp. sugar
    1/2 tsp. salt
    1/2 tsp. thyme
    1 (16 to 20 oz.) can garbanzo beans, drained
Preparation
    In a skillet, heat sausages and water to boiling.
    Cover; simmer 5 minutes.
    Remove cover; continue cooking, turning sausages, until browned (about 10 minutes).
    Remove sausages; drain and slice.
    Add oil to drippings in pan; saute green peppers, eggplant and onions until browned.
    Return sausages to skillet.
    Add tomatoes and their liquid, zucchini, sugar, salt and thyme.
    Heat to boiling.
    Reduce heat to low; cover and simmer 30 minutes.
    Stir in beans; heat through.
    Makes 6 servings.
