Mussel Timbale(Serves 4) - cooking recipe

Ingredients
    4 to 5 doz. mussels
    2 Tbsp. water
    2 Tbsp. shallots, minced
    1 tsp. thyme
    1 Tbsp. parsley, chopped
    1 bay leaf
    3 Tbsp. butter
    3 Tbsp. flour
    4 eggs, lightly beaten
Preparation
    Steam open mussels with water, shallots and herbs.
    Remove mussels from shells.
    Strain broth and boil down until it measures 1 cup.
    Melt butter in a double boiler over hot water.
    Add flour and cook 2 to 3 minutes.
    Stir in broth and heat sauce until it thickens.
    Remove from heat and cool.
    Stir eggs into cooled sauce.
    Fold in mussels and pour into a large buttered casserole dish.
    Place in a pan of hot water and bake at 300\u00b0 for 40 to 50 minutes.
    Test by inserting a knife into the center, it should come out uncoated.
    Allow a few minutes to set before serving.
    If desired, serve with hot mushroom sauce.
    Serves 4.
