Cornbread Dressing For 100 - cooking recipe

5 lb. self-rising corn meal
1/4 c. sugar
sage and poultry seasoning to taste
1 3/4 oz. minced onion, softened in water
2 1/2 qt. milk
5 eggs, beaten
2 bunches celery, chopped
3 to 4 large onions, chopped
chicken broth
Preparation

Mix cornmeal, sugar and seasonings.
Add onion; toss.
Add milk and eggs.
Blend well.
Pour into hot greased pans.
Bake at 425\u00b0 until browned; cool.
Crumble and let dry.
Add sage and poultry seasoning and pepper to taste.
Saute in butter the celery until tender.
Add chopped onions and celery to bread crumbs and toss.
Add broth to bread crumbs to make very moist.
Bake in large pan 30 to 45 minutes or until brown on top.
