Turkey And Cheese Wedges - cooking recipe
Ingredients

3/4 lb. ground turkey or turkey sausage
1 c. chopped fresh mushrooms
1/2 c. chopped onion
1/2 c. chopped green pepper
1/4 tsp. dried oregano, crushed
1/4 tsp. fennel seed, crushed
1 clove garlic, minced
1/4 c. grated Parmesan cheese
2 beaten eggs
1 (15 oz.) container low-fat Ricotta cheese
1/4 c. snipped fresh parsley
2 medium tomatoes, sliced
2 oz. American or Mozzarella cheese, shredded
Preparation

In a large skillet, cook turkey, mushrooms, onion, green pepper, oregano, fennel seed and garlic until turkey is no longer pink and vegetables are tender.
Drain off liquid.
Stir in Parmesan cheese.
Spoon mixture into a 9-inch pie plate.
In a medium bowl, stir together eggs, Ricotta cheese, parsley and 1/4 teaspoon pepper.
Spread over turkey mixture.
Bake, uncovered, in a 350\u00b0 oven for 25 to 30 minutes or until top is set.
Arrange tomatoes atop casserole; sprinkle with American cheese.
Bake 5 minutes more or until cheese is melted.
Let stand 5 minutes before serving.
Serves 6.
