Zucchini Bread - cooking recipe

Ingredients
    3 eggs
    1 c. oil
    1 c. brown sugar
    1 medium to large zucchini (unpeeled), grated (little over 2 c.)
    2 tsp. vanilla
    3 c. whole wheat flour
    1 tsp. salt
    1 tsp. baking soda
    3 tsp. cinnamon
    1/4 tsp. baking powder
    1 tsp. nutmeg
    1 c. chopped nuts (optional)
Preparation
    Beat eggs until light and foamy; add oil, brown sugar, zucchini and vanilla.
    Sift flour, salt, baking soda, cinnamon, baking powder and nutmeg together.
    Add to batter with nuts and mix well.
    Turn into 2 greased loaf pans.
    Bake at 350\u00b0 for 1 hour or until a tester comes out dry and clean.
