Low-Fat Garlic Rosemary Pork Roast - cooking recipe

Ingredients
    1 (3 1/2 lb.) lean boneless double pork loin roast, tied
    4 cloves garlic, crushed
    2 Tbsp. chopped fresh rosemary
    2 Tbsp. chopped chives
    2 Tbsp. fresh chopped parsley
    vegetable cooking spray
Preparation
    Untie roast and trim off fat.
    Re-tie roast.
    Rub garlic over surface.
    Combine rosemary, chives and parsley.
    Sprinkle evenly. Cover and chill 2 to 4 hours.
    Place roast on a rack of broiler pan coated with vegetable cooking spray.
    Insert meat thermometer into thickest part of roast.
    Place roast in a 450\u00b0 oven.
    Reduce heat to 325\u00b0 and bake 2 hours or until meat thermometer registers 160\u00b0.
    Let roast stand 10 minutes.
    Remove string and slice diagonally across grain.
