Zucchini And Ham Scallop - cooking recipe

Ingredients
    1 large zucchini, pared and diced (4 c.)
    1 (10 1/2 oz.) can condensed cream of mushroom soup
    1/3 c. milk (one third)
    1 fork beaten egg
    3/4 to 1 c. diced cooked ham
    3/4 c. chopped onion
    1 c. Pepperidge Farm stuffing mix, divided
    1 tsp. oil (Crisco)
    3/4 c. grated Cheddar cheese
Preparation
    Pare zucchini, dice and cook 7 minutes.
    Drain thoroughly (1 1/2 cups).
    Fork beat egg, combine egg, soup and milk.
    Add diced ham, onion, drained zucchini and 3/4 cup Pepperidge Farm stuff mix; toss lightly.
    Turn into oiled 10 x 6 x 1 3/4-inch baking dish. Combine the remaining 1/4 cup stuffing mix, oil and cheese; sprinkle over top of dish.
    Bake uncovered at 350\u00b0 about 1 hour.
