Jambalaya - cooking recipe
Ingredients

1 (3 lb.) fryer
2 c. shrimp, cleaned and deveined
2 medium onions, minced
1 large bell pepper, minced
1 clove garlic, crushed
1 1/2 tsp. salt
1/2 tsp. Tabasco
1/2 bunch parsley, minced
2 c. raw rice
1 lb. smoked sausage, diced
2 Tbsp. shortening
2 Tbsp. flour
3 c. peeled and diced tomatoes
3 c. water
1/2 tsp. thyme
1/2 tsp. black pepper
1/2 bunch shallots, minced
salt and pepper
Preparation

Cut chicken into serving pieces. Season with salt and pepper. Melt shortening in a heavy iron pot.
Fry chicken until brown; remove from pot; set aside.
