Ehu Molokai Sweet Potatoes Limu Cold Soup - cooking recipe

Ingredients
    3 lb. ehu fish bones and heads
    8 oz. Chardonnay white wine
    4 oz. diced round onions
    4 oz. diced leeks
    4 oz. diced celery
    7 oz. whole white peppercorns
    2 branch fresh thyme
Preparation
    Thoroughly clean fish bones by running tap water over bones for 5 minutes.
    Place bones in large soup pot with rest of ingredients.
    Add 3 quarts of cold water, cover and bring to boil. Skim the surface to remove scum, simmer for 15 minutes.
    Strain stock through a fine sieve.
    Yield: 2 quarts.
