Skillet Chicken And Sausage - cooking recipe
Ingredients

1 lb. Italian sweet sausage
1 (3 lb.) chicken, cut up
salt and pepper
1 1/2 c. converted rice
2 (13 3/4 oz.) cans chicken broth
1 (8 oz.) can tomato sauce with onions
1 (10 oz.) pkg. frozen peas
1 (4 oz.) can sliced mushrooms, drained
1 (4 oz.) jar pimientos, drained and diced
Preparation

In a large skillet, fry sausage until brown and well cooked; remove and cut into 1/2-inch rounds.
Sprinkle chicken with salt and pepper and brown on all sides in sausage drippings; remove. Add rice to drippings and cook until brown, stirring constantly. Add chicken, sausage, chicken broth and tomato sauce.
Cover and simmer 40 minutes or until liquid is absorbed and rice and chicken are tender.
Stir in peas, mushrooms and pimiento; cover and simmer for 5 minutes or until peas are tender.
