Carrot And Zucchini Muffins - cooking recipe

1 3/4 c. flour
1 c. packed brown sugar
1/2 c. wheat germ
1 1/2 tsp. soda
1 1/2 tsp. cinnamon
3/4 tsp. salt
1 egg
2/3 c. buttermilk
1/2 c. oil
1 1/2 tsp. vanilla
1 c. shredded zucchini
1 c. shredded carrot
1 c. chopped nuts
1/3 c. raisins
Preparation

Mix flour, brown sugar, wheat germ, soda, cinnamon and salt. Beat egg; stir in buttermilk, oil and vanilla.
Stir mixture with vegetables, raisins and nuts into flour mixture just until flour is moistened.
Spoon batter into muffin pan cups.
Bake at 350\u00b0 for 20 to 30 minutes until toothpick inserted in center comes out clean.
Makes a little better than 2 dozen muffins.
