Potato Soup - cooking recipe

Ingredients
    1 Tbsp. soy margarine
    4 medium potatoes
    1 c. soy milk
    1 medium zucchini, shredded
    1/4 tsp. vegie-sal
    1/2 c. parsley
    1 medium onion, chopped
    1 3/4 c. water
    2 medium carrots, shredded
    1/4 c. chopped green pepper
    1/4 tsp. veggie pepper
Preparation
    Melt margarine.
    Add onion.
    Cook and stir.
    Peel and dice potatoes.
    Cook with onion 2 minutes.
    Add water and bring to boil. Cook 10 minutes.
    Remove half of potatoes and mash (blender).
    Add milk.
    Return to saucepan.
    Add carrots, zucchini and green pepper. Simmer.
    Stir in salt, pepper and parsley.
    Cook until all vegetables are tender.
