Smothered Quail - cooking recipe

Ingredients
    6 quail
    6 Tbsp butter
    3 Tbsp flour
    1/2 cup sherry
    2 cups chicken broth
    salt and pepper to taste
Preparation
    Put butter in heavy skillet and brown quail, (lightly flour quail).
    Remove quail to baking dish.
    Add flour to butter in skillet and stir well.
    Slowly add chicken broth and sherry. Blend well and pour over quail.
    Cover baking dish and bake at 350\u00b0 until tender.
    Serve over rice.
