Eggplant Del Monico - cooking recipe

Ingredients
    2 eggplants, boiled, drained well and mashed
    1 tomato
    1 onion
    3 stalks celery
    1/2 stick margarine
    1 bay leaf
    boiled, seasoned shrimp (as many as you like)
    toasted bread crumbs
Preparation
    Combine all ingredients together and sprinkle with toasted bread crumbs. Place in casserole dish and cook for 30 minutes at 350\u00b0.
