Red Beans And Rice - cooking recipe
Ingredients

1 lb. red kidney beans
water to cover
1/2 lb. hot sausage
1/2 lb. ham
1 bunch scallions, chopped
1 green pepper
2 stalks celery
3 medium onions
large pinch of thyme
4 bay leaves
cayenne pepper to taste
salt and pepper to taste
Preparation

Soak beans in water or boil briskly in water for 1 hour; cover and let stand 1 hour.
Add meats, chopped vegetables and all seasonings.
Cook 2 to 3 hours.
Mash 1/4 of the beans and leave the rest whole.
The mashed mixture should look shiny and thick. Re-combine with whole beans.
Serve over rice.
