Spinach Rice Pie(Makes 6 Servings) - cooking recipe

Ingredients
    1 1/2 c. skim milk
    1 pkg. frozen spinach (in a pouch), thawed and squeezed to drain
    1 c. uncooked instant rice or brown rice
    2 oz. (1/2 c.) shredded Swiss cheese
    2 Tbsp. finely chopped onion
    1 tsp. salt
    1/4 tsp. nutmeg
    1 Tbsp. fresh lemon juice
    2 eggs, beaten
Preparation
    Heat oven to 350\u00b0. Spray 9-inch pie pan with nonstick cooking spray. In large saucepan, heat milk until very hot but not boiling. Add all remaining ingredients; mix well. Pour into sprayed pan. Bake at 350\u00b0 for 25 to 35 minutes or until knife inserted in center comes out clean.
