Potato Candy - cooking recipe

Ingredients
    2 sm. baked potatoes
    1-1/2 to 2 boxes confectioners sugar
    1 tsp. vanilla
    crunchy or smooth peanut butter
Preparation
    Peel potatoes and mash in large mixing bowl.
    Add sugar and vanilla gradually until mixture is consistency of dough.
    Roll out on wax paper.
    Spread generously with peanut butter.
    Roll into log and chill for several hours or overnight.
    Slice and store in refrigerator.
    May be frozen.
