Garden Brunch Bake - cooking recipe

Ingredients
    2 c. zucchini, sliced and quartered
    1/2 c. diced tomatoes
    1/2 c. chopped onion
    1/2 c. grated Parmesan cheese
    1/4 tsp. pepper
    1 1/2 c. skim milk
    3/4 c. powdered biscuit mix (Bisquick)
    3 eggs
    3/4 c. finely cubed ham or bacon bits (optional)
    salsa (to top, if desired)
Preparation
    Preheat oven to 400\u00b0.
    Lightly grease (or use nonstick cooking spray) a 7 x 11-inch glass baking dish.
    Place a layer of zucchini, tomatoes, onions (and meat) in dish.
    Sprinkle with Parmesan and pepper.
    Combine milk, biscuit mix and eggs.
    Beat until smooth (about 1 minute) and pour over vegetables.
    Bake about 30 minutes and let stand 5 minutes before cutting.
    Top with salsa, if desired.
    Serves 6.
