Pear Pie - cooking recipe

Ingredients
    6 c. ripe pears, pared, quartered and sliced
    9-inch unbaked pie shell
    2 Tbsp. lemon juice
    1/2 tsp. grated rind
    3/4 c. sugar
    3 Tbsp. flour
    1/2 tsp. coriander
    1/2 tsp. nutmeg
    1/8 tsp. salt
    2 Tbsp. butter
Preparation
    Place pears in pie shell.
    Sprinkle with lemon juice and rind. Sift together sugar, flour, coriander, nutmeg and salt.
    Sift over pears.
    Dot with 2 tablespoons butter.
    Cover with vented crust. Bake at 4525\u00b0 until center is lightly browned and pears soft (about 35 to 45 minutes).
    Serve with heavy cream while hot.
