Creole Seafood Gumbo - cooking recipe

Ingredients
    1 green pepper, cut into thin strips
    1 c. chopped onion
    1 c. diagonally sliced celery
    2 tsp. minced garlic
    2 Tbsp. vegetable oil
    2 (14 1/2 oz. each) cans diced tomatoes
    1 Tbsp. Spice Islands chili powder
    2 tsp. Spice Islands thyme
    1/8 to 1/4 tsp. Spice Islands cayenne pepper (less for milder taste)
    1 (16 oz.) pkg. frozen cod, perch, pollock or haddock, cut into 1-inch cubes
Preparation
    In large saucepan or Dutch oven, saute green pepper, onion, celery and garlic in oil until tender, about 2 to 3 minutes.
    Add remaining ingredients and bring to a boil.
    Reduce heat, cover and simmer for 15 minutes or until fish is tender.
    Makes 4 servings.
