Chicken Gumbo - cooking recipe

Ingredients
    5 lb. stewing chicken
    flour
    1/4 c. bacon fat
    10 c. boiling water
    2 c. chopped tomatoes
    1/2 c. corn kernels
    1 c. sliced okra
    1 large green pepper, diced
    1 carrot, diced
    1 c. chopped celery
    1/2 tsp. salt
    fresh ground pepper to taste
    1/4 c. diced onion
    1/4 c. raw rice
Preparation
    Cut the chicken into pieces, and dredge each piece in flour. Brown the pieces in the bacon fat, then pour in 5 cups of boiling water.
    Simmer the chicken, uncovered, until the meat falls from the bones.
    Drain the broth.
    Bone, skin and chop the meat. Reserve the meat and broth only.
