Zucchini Bread(Low-Fat, Low-Sodium) - cooking recipe

Ingredients
    3 eggs (can substitute Egg Beaters)
    2 c. sugar
    1 c. vegetable oil (canola)
    1 tsp. vanilla
    3 c. grated zucchini squash
    2 tsp. baking soda
    1/4 tsp. baking soda
    1 Tbsp. cinnamon
    2 c. flour
    2 c. chopped nuts
Preparation
    Lightly oil and flour dust 2 bread pans.
    Beat eggs until frothy; add sugar, oil and vanilla.
    Blend in remaining ingredients.
    Bake at 350\u00b0 for 1 hour.
