Shrimp Jambalaya - cooking recipe
Ingredients

2 Tbsp. bacon fat
1 Tbsp. flour
1/2 cup chopped onions
1 clove garlic, minced
1 can drained tomatoes, save liquid
1/2 cup water
1 green pepper, chopped
1 1/2 tsp. salt
1/4 tsp. red pepper flakes
1 Tbsp. Worcestershire sauce
3 cups cooked rice
2 cups cooked shrimp
1 lb. cooked, sliced sausage (Griffens Fat Link)
1 cup tomato juice (drained from can)
grated Parmesan cheese
parsley
Preparation

Melt fat, blend in flour, add onions and peppers.
Cook until tender.
Add garlic, tomatoes, water and seasonings, stirring occasionally on low heat.
Add rice, shrimp, sausage and tomato juice.
If making ahead, add more tomato juice.
Put into greased casserole.\tSprinkle with cheese and parsley.
Bake 350\u00b0, until hot...about 20 minutes.
