Oatmeal-Bran Muffins - cooking recipe

Ingredients
    2 c. boiling water
    2 c. 100% bran cereal
    1/4 c. oil
    3/4 c. applesauce
    1/2 c. sugar
    4 eggs
    3 1/2 c. buttermilk
    5 c. flour
    1 tsp. salt
    5 tsp. baking soda
    4 c. oatmeal
Preparation
    Pour water over bran and set aside.
    Mix oil, applesauce, sugar, eggs and buttermilk in medium sized mixing bowl.
    In large bowl, mix flour, salt, soda and oats.
    Add to flour mixture both other mixtures and stir until combined.
    Fill muffin tins 2/3 full and bake at 375\u00b0 for 20 minutes.
    Batter may be refrigerated up to 6 weeks.
