Lori'S Lemon Pie - cooking recipe

Ingredients
    1 1/2 c. sugar
    1/3 c. cornstarch
    1 1/2 c. water
    3 egg yolks
    3 Tbsp. butter
    4 Tbsp. lemon juice
    1 1/2 Tbsp. grated lemon rind
    1 baked pie shell
    whipped cream
Preparation
    Mix sugar and cornstarch in saucepan; stir water in gradually. Cook over medium heat, stirring constantly, until mixture thickens and boils.
    Boil 1 minute.
    Slowly stir half the hot mixture into 3 egg yolks, slightly beaten.
    Pour this mixture back into remaining hot mixture in saucepan.
    Boil 1 minute longer. Remove from heat; continue stirring until smooth.
    Blend in butter, lemon juice and lemon rind.
    Pour into already baked pie shell and chill.
    Cover with whipped cream and enjoy.
