Ingredients

5 eggs
pinch of salt
1 1/2 c. milk
1 1/2 c. sifted flour
1/4 tsp. baking powder
1 tsp. vanilla
Preparation

Beat eggs with salt, milk, baking powder and vanilla.
Add flour to mixture.
Using a whisk, mix thoroughly.
(Small lumps in batter are okay.)
Heat 2 to 3 tablespoons oil in medium sized pan on medium heat.
Coat bottom of pan with oil evenly.
(Lift pan and gently tip from side to side to coat pan.)
Pour approximately a 1/4 cup of the batter into the heated pan.
Spread batter over surface of pan with spoon.
Fry until light golden.
Using spatula, flip pancake over to bake second side.
Makes 10 to 12 pancakes.
