Morning Glory Muffins - cooking recipe

Ingredients
    2 c. flour
    1 c. sugar
    2 tsp. baking soda
    2 tsp. cinnamon
    1/2 tsp. salt
    2 c. grated carrots
    1 c. chopped walnuts
    1/2 c. shredded coconut
    1 apple, peeled and cut into small pieces
    3 eggs
    1 c. oil
    2 tsp. vanilla
    1/2 c. raisins (optional)
Preparation
    Mix flour, sugar, soda, cinnamon and salt.
    Stir in carrots, raisins, nuts, coconut and apple pieces.
    Beat together eggs, oil and vanilla.
    Stir all together until just combined.
    Fill to the top of muffin cups.
    Bake at 350\u00b0 for 35 minutes.
    Makes 15 muffins.
