Tamale Pie - cooking recipe
Ingredients

1/2 Tbsp. olive oil
1 c. chopped onion
1 c. bell pepper
1 (10 oz.) pkg. frozen corn
1 (19 oz.) can red kidney beans, drained
1 (15 oz.) can stewed tomatoes
1 (6 oz.) can vegetable juice cocktail
1 Tbsp. chopped fresh cilantro leaves
2 tsp. chili powder
1 tsp. ground cumin
1/2 tsp. salt
Preparation

Prepare Vegetable Filling.
In a large skillet, heat oil; add onion and green pepper.
Saute until onion is transparent.
Stir in corn, beans, tomatoes, vegetable juice cocktail, fresh cilantro (if desired), the chili powder, cumin and salt.
Cook over medium heat for 5 minutes.
Place filling in a 2-quart casserole dish. Excellent with Cornbread Topping.
