Casey'S Lemon Curd - cooking recipe

Ingredients
    3 well beaten eggs
    1 1/4 c. sugar
    1 tsp. grated lemon peel
    1/3 c. freshly squeezed lemon juice
    2 Tbsp. butter or margarine
Preparation
    Mix the ingredients in a microwave container.*
    Cook for 1 minute on High in the microwave; stir with a whisk.
    Continue cooking 1 minute and stirring until the mixture turns a little clear and bubbles evenly.
    Pour in jars.
    Chill.
    Keep refrigerated.
