Eggplant Patties - cooking recipe

Ingredients
    2 c. eggplant
    2 beaten eggs
    1/2 c. bread crumbs
    1 tsp. basil
    other seasonings to taste
Preparation
    Peel and cut eggplant. Steam until tender (10 to 15 minutes). Drain 1 hour (this removes excess water).
    Mix eggplant with remaining ingredients. Shape into patties.
    Fry on top of stove or bake in a 350\u00b0 oven for 30 minutes.
