White Bean Soup - cooking recipe

Ingredients
    1 lb. dry navy beans
    1 large onion, chopped
    2 stalks celery, chopped
    1 large clove garlic, chopped
    2 Tbsp. olive oil
    1 bay leaf
    3 tsp. sugar
    1/4 tsp. crushed red pepper
    1 carrot, chopped
    1 Tbsp. parsley flakes
    salt to taste
Preparation
    Clean beans.
    Soak overnight.
    Drain off soaking water. Put in large pot all ingredients. Cover with water. Bring to a boil. Turn down
    and
    simmer
    several
    hours
    until beans are tender. Remove bay\tleaf.
    To thicken, remove about 1 cup soup and mash by hand
    or put in processor. Return to soup and stir in.
