Zucchini Casserole - cooking recipe
Ingredients

4 medium zucchini, sliced 1/2-inch thick
3/4 c. grated carrots
1/2 c. chopped onion
2 1/4 c. herbed stuffing
6 Tbsp. oleo
1/2 c. sour cream
1 can cream of chicken soup
Preparation

Cook the zucchini for 4 minutes. Drain. Gently stir in carrots, onion, 1/2 cup stuffing, sour cream and soup.
Turn into 1 1/2-quart casserole.
Melt the oleo.
Toss with remaining stuffing. Top casserole. Bake at 350\u00b0 for 30 minutes. Serves 6.
