Canned Okra - cooking recipe
Ingredients

1 gal. sliced okra
6 Tbsp. vinegar
2 1/2 Tbsp. canning salt
corn meal
Preparation
-
Add vinegar and salt to okra.
Cover okra with water; bring to a boil.
Simmer 5 minutes.
Put in hot jars.
Add liquid to cover okra.
Seal with hot lids.
To cook:
Rinse well.
Add to soups, etc. or rinse well and add small amount of corn meal.
Shake well. Fry in small amount of olive oil or other oil.
Oil should be hot. Makes 9 or 10 pints.
